This high-protein breakfast casserole is the kind of breakfast I want when I’m trying to make the week easier without giving up flavor. It combines whole eggs, egg whites, cottage cheese, turkey, tomatoes, scallions, and sharp cheddar in one simple bake that can be divided into three portions.

Protein is usually the first thing I think about when I’m building a meal. From there, I think about what else will make the meal satisfying, practical, and something I’ll actually look forward to eating. That approach is a big part of what The Flavor Balance is about.

Why I Like This Breakfast Casserole

I like recipes that do more than one job.

This one gives me a breakfast I can prepare in one baking dish, portion after cooking, and have ready when I don’t want to start from scratch in the morning.

The cottage cheese blends into the egg mixture rather than sitting in large curds, which helps give the casserole a smoother texture. Tomatoes and scallions add freshness, while the turkey and cheddar give it more savory flavor.

It is simple, but it does not taste like something I made just because I was trying to check a nutrition box.

Protein First, Then Build the Balance

One of the biggest changes in the way I eat has been learning to start by asking, “Where is the protein?”

That does not mean protein is the only thing I eat. It is simply the starting point I personally use when building meals.

In this casserole, the eggs, egg whites, cottage cheese, turkey, and cheese all contribute to the meal. From there, I can build the rest of my breakfast around what makes sense for me that day.

That might mean fruit on the side, avocado, toast, or simply enjoying the casserole on its own.

The goal is not perfection. The goal is building meals I can realistically continue eating.

A Few Tips Before You Bake It

For the smoothest texture, whisk the eggs, egg whites, and cottage cheese thoroughly before adding the other ingredients.

Dice the tomatoes fairly small so they distribute throughout the casserole instead of creating large watery pockets.

When the casserole comes out of the oven, give it about five minutes to rest before cutting it. That short resting time helps the portions hold together better.

And as always, season it to your own taste. I use garlic powder, black pepper, and salt here, but the point is still the same one I use throughout my cooking:

What You’ll Need

Ingredients

  • 6 large whole eggs
  • 1 cup egg whites
  • 1 cup low-fat cottage cheese
  • 9 slices Member’s Mark turkey lunch meat, chopped
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/2 cup fresh tomatoes, diced
  • 1/3 cup scallions or fresh herbs, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Nonstick cooking spray

Step by Step

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat an 8x8-inch baking dish with nonstick cooking spray.
  2. Blend or whisk the whole eggs, egg whites, and cottage cheese until the mixture is smooth and well combined.
  3. Season the egg mixture with salt, black pepper, and garlic powder. Fold in the chopped turkey, diced tomatoes, and scallions.
  4. Pour the mixture into the prepared baking dish.
  5. Sprinkle the shredded sharp cheddar evenly over the top.
  6. Bake for 28 to 32 minutes, or until the center is set and the top is lightly golden.
  7. Let the casserole cool for about 5 minutes before cutting it into 3 portions.

Fresh tomatoes and scallions help keep the casserole bright and flavorful. Blending or thoroughly whisking the eggs with the cottage cheese creates a smoother, fluffier texture.
